Fried Fish Fillets

Prep Time: 5-10 minutes
Servings: 3-5
Cooking Time: 30 minutes

4  filets or your favorite fish (rainbow or brown trout, sole)
¼ teaspoon of freshly ground black pepper
1 teaspoon of salt
1 cup of oil

2 cups of seasoned super fine breadcrumbs
2 cups of flour
2 eggs
1/2 cup of milk
A pinch of salt & pepper

INSTRUCTIONS
Season the fish with salt & pepper. Marinate for 15 minutes

Prepare flour with salt & pepper

Prepare egg wash with eggs & milk. Beat well

Lightly coat the fillets with flour then shake off excess flour

Dredge in egg mixture. Then, dredge in breadcrumbs

In large skillet, heat oil and fry the fish (low-medium heat) until light golden, about 1-2 minutes each side

1 cup of flour
1 tablespoon of baking powder
1 teaspoon of salt
1 teaspoon of pepper
1/2 cup of water
1/2 cup of milk
1 teaspoon of vinegar

In a mixing bowl, mix dry ingredients together

Combine water, milk and vinegar. Add to dry mix slowly, stirring constantly until all lumps dissolve and batter is smooth.

Rinse fillets in cold water, drain, pat dry with paper towels. Season with salt and pepper

Dip fish fillets in batter and deep fry until golden brown, turning once

Serve with lime/lemon wedges, tartar sauce, or ginger lime sauce
