Flaming meatballs
Prep Time: 5-10 minutes
Servings: 10-12 (small) 5-10 (large)
Cooking Time: 1hr

1 lb of pork, veal, or beef
½ teaspoon freshly ground black pepper
1/3 cup freshly minced parsley
1 cup of breadcrumbs
1 egg lightly beaten
3 garlic cloves, minced
1/2 onion, finely chopped
1/3 cup of milk
1/2 tablespoon of kosher salt
1 1/2 cup of oil
1 tablespoon of crushed red pepper flakes

Sauce
1 large can of crushed tomato
1/2 (12-14oz) can of tomato paste
½ tablespoon of sugar
A pinch of salt
½ teaspoon of oregano
1 bay leave
1 jalapeno pepper, finely chopped (optional)

Instructions

In a mixing bowl, combine the meat, bread crumbs, parsley, garlic, onion, pepper flakes, egg, milk,  salt & pepper. Mix well

Add the meat, parsley, eggs, garlic, pepper flakes, salt, ground pepper and parsley. Mix well with hands and make 2” meatballs (bigger, if desired)

Browning Meatballs

Option 1: In a large skillet, on medium heat, heat oil and brown meatballs on all sides (1 min. each side). Transfer to tray lined with paper towels

Option 2: Place the meatballs in a cookie sheet and broil both sides. Set aside.


In large saucepan, add all sauce ingredients. Bring to simmer and add meatballs.

Cook on low -medium heat for 30 minutes

Serve with pasta or your favorite side dish
