Cucumber Dip

2 cucumbers, seedless
1 small onion
2-3 celery stalks, grated or finely chopped
32 oz of plain yogurt (whole)
11/2 teaspoon of sugar
1/2 cup of sour cream
1 large clove of garlic, finely minced
1/2 tablesspoon of salt
2 tablespoon of vinegar

Grate the cucumber in a food processor or manually, using a hand held grater

Pour grated cucumber in a colander with salt and let water drain at room temperature for about 1 hour

Pour yogurt ina colander and liquid drain at room teperature for 1 hour

Once drained, combine yogurt, cumcumber and the rest of the ingredients in a mixing bowl and blend well

Refrigerate for 2-3 hours

Garnish with dill or chives

Serve with salads, vegetables, burgers etc.
