Pan Braised Tongue
(Lengua Guisada)

Prep Time: 5-10 minutes
Servings: 3-5
Cooking Time: 30-45 min

1-2lb tongue
1 large onion, chopped
1 lime juice
3 cloves of garlic, finely minced
5-10 olives
1 small green pepper, cut Julienne style
1 (16oz) can of crushed tomatoes
1 tablespoon of tomato pate
Salt & pepper to taste
1 chicken bullion diluted in ½ cup of hot water
4 cups of water
2 tablespoon of butter


TIP: Tongue is done when the top layer of skin is detaching from the tongue.

Boil tongue in water with salt until tender (add water as needed)

Once tender, let cool. Remove top skin layer and cut into slices

In a deep skillet or pot, melt the butter and add the onions.

Cook onions until they are translucent

Add the rest of the ingredients and cook on low fire for 20 minutes
