Arenques Guisados (Herrings)

2 lbs of arenques filets (herrings)
3 tablespoon of olive oil
1 cup of water

2 medium onion, Julienne style
1 green bell pepper, Julienne style
1 tablespoon of capers
1 tablespoon of pitted olives
2 tomatoes, cut in small wedges or cubes
1 tablespoon of tomato paste
½ cup of parsley, finely chopped

INSTRUCTIONS
TIP: Arenques are very salty, similar to Bacalao. They need to be soaked overnight.

Escabeche
To prepare the Escabeche,  Heat oil in a large skillet

Add the last 7 ingredients and sauté for 3-5 minutes.

Add the water and filets and cook for about 20 minutes.

*Careful when you stir, as the filets may fall apart 

Serve with white rice, pasta, pita pockets, flour tortillas
