Christophine Salad

Prep Time: 5-10 minutes

Cooking Time: 30 minutes

3 christophines, cut in half
2 large carrots
1 onion, sliced or chopped
1 cauliflower
2 tablespoon of olive oil
1 tablespoon of vinegar
a pinch of salt & pepper


In a pot, bring water to a boil and the christophines and carrots. Remove from water when they are fork tender 

Steam cook the cauliflower

Peel christophines and carrots, cut in small slices

Combine christophines, carrots, cauliflower and onions

Mix olive oil, vinegar, salt & pepper and mix well

Add to the salad
