Pan Braised beef liver
(Higado Guisado)

Cooking Time: 30-45 minutes

2lbs of beef liver, cut into 1” slices
2 aji gustosos (optional)
1 small onion
2 cloves of garlic, finely chopped
1/4 tsp of oregano
1/2 green bell pepper
1 chicken bouillon
a pinch of salt
1 tablespoon of tomato paste
2 tablespoon of shiraz red wine
1 tablespoon of lime
3 tablespoon of oil

TIP: For a tender and juicier liver, pour milk in a bowl and add the liver. Make sure liver is covered by the milk. Let it stand for about 30 minutes in the refrigerator

Rinse the liver well

Blend the aji gustosos, garlic, oregano, salt and lime juice. Use this blend to marinate the liver for ½ hr

A deep skillet, heat oil and saute the liver for a minute or two

Add the marinade, tomato paste, peppers and wine

Cook on low -medium heat for 30 minutes

Serve with white rice
