White Beans Soup

Prep Time: 10 minutes
Servings: 4-6
Cooking Time: 1-2 hrs

TIP: add water as needed & taste before adding salt

TIP: you can substitute dry beans for can beans.
TIP: Add 2 tablespoons of oil to reduce foaming

1lb of white beans (small white beans)
½ lb of ham or smoked pork hocks
¼  lb of chorizos, cut into 1" slices
12 -16 cups of water

4 garlic cloves, chopped
1 chopped onion
2 Maggi chicken bullion cubes
1 fresh bay leaf
Salt to taste
½ teaspoon of freshly ground black pepper
1 tablespoon of tomato paste (optional)
2 tablespoon of vinegar


Soak beans overnight to reduce cooking time by at least 30 minutes

In a deep pot add the water, beans, hocks or ham and chorizos (add water as needed)

Cook, on medium heat, until beans are tender, about 2- 2 1/2 hours

Once tender, add the remainder of the ingredients.

Continue cooking on medium heat for 20 minutes
