Tortilla de Papas (Potato Omelette)

cooking Time: 45 minutes

3 russet potatoes, peeled
3 eggs
1 medium onion, finely sliced or chopped
Olive oil
1 cup of chicken stock
1/4 teaspoon of black pepper
A pinch of salt

TIP: Do not over-cook potatoes. they should firm before baking

Heat oven to 350 degrees

Thinly slice the potatoes, using a food processor or a mandoline slicer

In a large pan, heat oil and saute onions until golden. Put them aside

Using the same pan, add 2 tablespoons of oil saute potatoes until they are golden. Then, add the chicken stock. Simmer, on low-medium heat for about 10 minutes. Turning occasionally. Let it cool

In a large mixing bowl beat eggs with salt and pepper. Then add onions and potatoes. Mix well

Transfer the misture to a baking dish and bake for about 30-45 minutes
