Stuffed Cubanelle Peppers

Cooking Time: 30 minutes

4 cubanelle peppers
1 lb of ground beef or chicken
1 onion, finely chopped
3 cloves of garlic, finely chopped
¼ teaspoon of black pepper
1 Maggi chicken bouillon, cut into small chunks
¼ teaspoon of salt
1 tablespoon of Hein'z tomato paste
¼ cup raisins
4 slices of mozzarella cheese or your favorite cheese, cubed
¼ cup of water
1/2 Jalapeno pepper, chopped (optional)


Gently score the peppers from tip to end to create the form of a canoe. Remove the seeds and wash

In a large skillet, heat oil, add the meat and brown

Add the onions, black pepper, chicken bullion, salt and water

Cook for 20 minutes. Let cool

Heat oven @ 350 degrees

Add the raisins to the meat and mix well

Stuff the pepper with the meat mixture and mozzarella cheese

Bake @ 350 degrees for 10 minutes or until cheese is bubbly
