Tongue in Hot & Spicy Sauce
(Lengua Picante)

Prep Time: 5-10 minutes

Cooking Time: 30-45min

1-2lb tongue
1 large onion, chopped
1 tsp of vinegar
2 cloves of garlic, finely minced
1 tablespoon of capers
1 tablespoon of mustard
1 jalapeno
Salt & pepper to taste
4 cups of water
2 tablespoon of butter 
4 filets of anchovy, finely chopped

TIP: Tongue is done when the top layer of skin is detaching from the tongue.

Boil tongue in water with salt until tender (add water as needed)

Once tender, let cool. Remove top skin layer and cut into diagonal slices

In a deep skillet or pot, melt the butter and add the onions. Cook until golden

Add meat and the rest of the ingredients and cook on low-medium fire for 20-30 minutes
