Smoked Red Beans (see dry smoked red beans)

Prep Time: 5-10 minutes
Servings: 3-5
Cooking Time: 30 minutes

2 cans of black beans (24oz), drained
2 cans of water (24 oz)
1/4 Maggi chicken buoillon
A pinch of freshly ground pepper
1 tablespoon of tomato paste
1 teaspoon of white vinegar
2 tablespoon of olive oil
1 small smoked pork chops, cut into small cubes or 1 smoked pork hock
1 teaspoon of red pepper flakes (optional)

½ onion
2 large garlic cloves
1/4 teaspoon of oregano
2-3 sprigs of cilantro
2 twigs of thyme or 1 teaspoon
2 aji gustosos


TIP: Mash 1 can of beans for extra texture
TIP: You can chop the herbs, instead of blending them
TIP: Drain the water to reduce the sodium

Blend or chop the last 6 ingredients

In a pot, heat oil and saute chopped or herbal blend,  black pepper and tomato paste for 1-2 minutes. Then add the beans and saute 1-2 minutes

Add water, vinegar, chicken bullion and pork chops or hock

Cook for 20-25 minutes

Serve with white rice
