Rice Pudding

Prep Time: 5-10 minutes
Servings: 8-10
Cooking Time: 1hr 45 minutes (medium-low heat)

1 cup of white long grain rice
4 cups of water
4 cups of milk
2 sticks of cinnamon
Sun raisins
1 can (12oz) of evaporated milk
1 can (12oz) of sweetened condensed milk
1 can of coconut milk
1 teaspoon of organic vanilla
3/4 cup of sugar
1 tsp of salt


Wash rice until water runs clear

In a non-stick deep pot, bring water to a boil, add rice, cinnamon and salt. Stir occasionally

Cook on low to medium heat until it simmers

Pour the milks, lime peel, sugar and vanilla into the pot. Stir occasionally

Cook rice until it's very tender (1hr)

Serve cold or warn and garnish with raisins, cinnamon powder and cinnamon sticks
