Prep Time: 15 minutes
Servings: Makes about 1 to 1 1/4 cups
Uses: To season or marinade meats, beans, stews, just about anything. A teaspoon to a tablespoon will do the job.
1 small bouquet of cilantro
A small bunch of thyme (15-20 twigs)
6-10 leaves of culantro
8 cloves of garlic (peeled)
6 tablespoon of olive oil
10 aji gustosos
3 tablespoon of oregano
1 tablespoon of freshly ground black pepper
1 medium size onion cut into 4
2 tablespoon of salt
Add all ingredients in your blender or food processor and blend until smooth
Store unused recaito in the refrigerator or in the freezer for later use
TIP: You can use a small ice tray with a cover instead of plastic bags to store it the freezer; it can last for months!
