Pork in  Olive & Mushroom Sauce
(Puerco Guisado)

Cooking Time: 30 minutes

2 lbs of pork loin chunks
¼ lb of ham, cut in pieces
1 cup of mushroom
1 cup of cream of mushrooms
1 tablespoon of capers and olives
2 cups of white Shiraz wine
1 (16oz) can of crushed tomato
1 tablespoon of Heinz tomato paste
1 limejuice
1 Maggi chicken bouillon cube
2 tablespoon of oil

2-3 sprigs of cilantro and thyme, finely chopped
4 cloves of garlic, finely minced
Salt to taste
½ tsp of freshly ground black pepper
1/2 tsp of ground oregano

TIP: You can blend the last 5 ingredients in a blender or chop them using a hand chopper

In a bowl, rinse meat. Add lime juice and the blended herbs. Marinate for ½ hr

In a pot, heat oil and brown the meat. Do not pour the marinade. Instead, add 1 cup of water to the marinade and use it to deglaze meat.

Once meat is brown and richly colored, add the
the wine and the rest of the ingredients

Cook on medium heat for 45-1hr

Serve with rice or your favorite side dish
