Chimichurri Sauce

1 large bunch of cilantro or parsley leaves
4 of cloves garlic
2 tablespoon of freshly squeezed lime juice
Juice of one lime
1/2 cup of shallots
2 basil leaves
a pinch of oregano and thyme
Dash or two of red pepper flakes (optional)
Salt and Pepper to taste

2/3 cup olive oil


Using a food processor or a vegetable chopper, finely chop all ingredients, except the oil. Once chopped, transfer to a bowl and mix it with olive. Cover well and refrigerate for at least 2 hours before serving

Enjoy this sauce with churrasco, burgers, steaks or empanadas
