Braised Drunken Rabbit (Conejo Guisado)

Cooking Time: 1-1½ hr

2-3 lbs of rabbit, cut into pieces
3 aji gustosos
½ tablespoon of salt
1 cup of beer
1 cup of Reisling wine
1 medium onion, chopped
3-4 sprigs of cilantro or parsley
2-3 large potatoes, cut into cubes
1 cup of carrots
1 cup of garbanzos (can)
4 cloves of garlic
½ tsp of salt & pepper
32 oz of chicken stock
1 can (16oz) of crushed tomato
4 tablespoon of oil


Rinse meat well.

Using a food processor or a chopper, mash the garlic, oregano, pepper, and salt.

Pour over meat, along with a cup of dry white wine and marinate for at least ½ hour

In a pot heat oil and brown the meat on all sides

Add the rest of the ingredients and cook on medium heat until tender (about 1 hr)

Serve with rice or your favorite side dish
